1 onion, thinly sliced
1 pear, thinly sliced to about 1/2 to 3/4 in. (Can do chunks, but slices won't roll off when eating!!)
Goat or feta cheese
Sea salt & fresh ground pepper
Balsamic vinegar reduction (simmered until syrupy), with honey to taste
There are no set amounts -- just build to your liking!
- Slowly caramelize onion slices in half olive oil / half butter over low heat until golden brown (up to 20 mins, stirring regularly). In the final few minutes, add pear pieces to soften.
- Arrange onions on naan bread lightly brushed with olive oil. Crumble cheese on top to taste.
- Bake at 350 for ~ 10 minutes. Cheese doesn’t really melt; you just want to brown and crisp the bread. Remove and very, very lightly drizzle a little balsamic reduction and honey. Cut into pieces and serve immediately. Pieces can be frozen ahead and rewarmed.
