Barbara Lewis shared this idea from a recent potluck, which occurred while her kitchen was being renovated.
Without a kitchen at the time of the potluck, but with nice cucumbers coming out of the garden, I turned to a super simple dish both my husband and I love. Thin slice 2 peeled cucumbers and then stir in 2 T. white vinegar, 1 tsp. salt and ½ tsp. sugar. This makes a light, delicious summer salad. You can use it in many ways.
When you have more fresh vegetables to enjoy, you can dice cucumbers with peppers and tomatoes. I made lots of this one evening, then the next night added diced cooked chicken and two dollops of mayo, a dash of prepared mustard and a small amount of small pasta.
